
Spinach haters, pay attention. Lol! You might want to reevaluate your love/hate relationship with these dark leafy greens because they offer up a pretty big list of benefits you can’t ignore.

Spinach is low in calories, low in fat, high in fiber and antioxidants, and has many health benefits including lowering blood pressure, boosting brain health, improving gut health, improving blood health, protecting eyesight and your immune system. Now do you understand why we use spinach as a meal base for our Prepackaged Meal Prepped Meals? By adding one cup of spinach to the bottom of your meal, or salad, you are adding your daily recommendation of Vitamin K and Vitamin A, and half of your daily recommendation of magnesium, vitamin C, Iron, Potassium, and Folate to your dish.
AND, THAT is why we call it a “Nutritional Powerhouse”. Nutrient density matters! It’s the easiest way to consume those vitamins and nutrients without taking an additional supplement. We know it sounds crazy, but we started eating raw spinach by the handful every morning and night fifteen years ago. Our Bloodwork has looked great ever since.
If you just can’t stomach the thought of eating raw spinach by the handful, try these simple tricks:
- Blending it into a smoothie
- Adding it to soups and stews
- Mixing it into scrambled eggs and pasta dishes
- When ordering a burger at your favorite burger joint, ask them to swap out the iceberg for spinach. (Most establishments have spinach on hand.)
- Blend it into sauces, for example: Pesto Sauce

The ideal daily goal is 2 cups of spinach a day. Do you think you could do it? Challenge yourself to eat two cups a day for one month. Here’s a spinach salad recipe to try:
Spinach and Chicken Salad with Strawberry Vinaigrette
Yields: 5 servings
Ingredients:
For the salad: Mix Ingredients together in large bowl.
- 10 cups of spinach
- 1 cup of sliced cucumbers
- 1 cup of fresh blueberries
- ½ cup dried cranberries
- ½ red onion sliced thin
- 10 tbsp of slivered almonds
- 15 oz chopped chicken breast (3 oz per person)
- 1 cup goat cheese crumbles (optional)
For the vinaigrette: Blend ingredients together.
- 1 cup of fresh strawberries
- 1 tbsp of lemon juice
- 2 tbsp of balsamic vinegar (White Balsamic Vinegar is our favorite!)
- 2 tbsp of avocado oil
